The 2006 Twomey Russian River Pinot Noir is a beautifully balanced wine that expresses great elegance and depth. It displays a red sapphire color and aromas of dried rose petal, strawberry jam, potpourri and cinnamon. The initial impression on the palate is of fresh strawberry and cherry, followed by a generous fullness, good acid balance and a long finish of dried herbs.

The winter of 2006 was quite wet, with rains continuing into the early spring. Fortunately, bloom conditions were ideal – warm and sunny – and bloom was fast and even. The defining climatic event was a 10-day heat wave in July, with temperatures rising over 100 degrees. Mild August temperatures slowed maturation, allowing the grapes to achieve full aromatic intensity for the September harvest.

The wine was aged for 13 months in French Burgundy barrels, with eight months spent sur lies. French Burgundy barrels are more appropriate for Pinot Noir because they have thicker staves that allow less air exchange, helping to preserve the wine’s delicacy and aromatics.

The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer fifty-two wines by-the-glass.

Insignia is recognized as one of Napa’s signature red wines and routinely one of its finest. It's fascinating for its ever—changing varietal composition, remarkable consistency from year to year and ability to improve with age. It has earned an outstanding score in 26 of its 29 vintages, and in years such as 1997 and 1994, it rates in the classic category (95 to 100 points).

The 2005 Insignia is a blend of 92% Cabernet Sauvignon, 7% Petit Verdot, and 1% Malbec. Elegant and restrained (which is very much in keeping with the style of this vintage), the wine is also rich, dense, pure, with chocolatey cassis notes intermixed with hints of subtle wood, roasted herbs, and spice.

2007 White Wine, Torres Vina Sol, Spain

Parellada, a traditional white grape, is what gives Viña Sol its distinctive fresh fruitiness. Excellent as an aperitif and with cod dishes, salads, soft cheeses, trout, and seafood in general. This wine is elegant, fresh, and has fruity aromas with fine spicy hints. Smooth, rich and crisp on the palate, with plenty of fruity flavors (apples and pineapples) and a touch of spice (fennel).

This Chardonnay has a light straw color, with aromas of ripe tropical fruit, nectarine and melons dominating. Follow through onto the full palate with peach and melon fruit, some honey and nutty background with a crisp clean long finish round this wine to perfection. Served chilled, this is a superb food wine that will compliment many dishes.

2006 Red Wine, The Other, Peirano Estate, Lodi

Making a truly wonderful wine begins with only the best estate grown fruit from the heart of the Lodi Appellation. They make sure their vines struggle just a bit, through techniques like deficit irrigation, to help concentrate the fruit flavors. Crop thinning, leaf pulling and vineyard management also insure the full and proper ripening. They also hand harvest into small bins to keep the fruit intact for its trip to the winery.

One is immediately struck by the vibrant color of this wine. The aromas of blackberries and plums are complemented by spice, toasty oak and cedar notes. Upon washing this liquid across the palate, a wave of sweet black cherries and boysenberries, with a hint of smoky, dark oak lead to a long, totally seductive, finish. A great expression of this variety, this wine will gently knock your socks off.

2007 Pinot Gris, Hahn Estate, Santa Lucia Highlands

The SLH Pinot Gris grapes are grown on the gentle slopes of the Lone Oak Vineyard in the Santa Lucia Highlands. The east-facing slopes of this vineyard catch the morning sun, while ocean breezes caress the vines in the late afternoon. These conditions allow for the delicate and supple flavors of our Pinot Gris to develop in the long growing season of this appellation.

Racked clean to stainless steel and whole cluster pressed, this aromatic Pinot Gris opens with soft, fruit-derived aromas with hints of honeysuckle, pear blossom and citrus. As the wine opens with air, notes of tropical fruit, ripe pineapple, and light notes of hay and grass make this the perfect wine for a picnic or evening barbeque. Smooth and light with sweet, supple flavors on the mid-palate, this Pinot Gris is balanced through the finish. Serve with oysters or clams steamed on the grill in butter, scallions, fresh salt and a splash of Pinot Gris.

Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.
