The Fish Market's Winekeeper
While “The Winekeeper” was making a name in the service industry, The Original Fish Market was one of the first and only restaurants in the area to have a Winekeeper System. The Winekeeper keeps wines fresh as the moment they are uncorked for up to six weeks. The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer fifty-two wines by-the-glass.

2005 BV Beauzeaux
Red Wine, California
There are eight different varietals present in the 2005 Beauzeaux Red Wine, and each requires its own combination of soil, climate and conditions. The Central Coast vineyards produce a striking minerality, while the North Coast vineyards provide dark fruit flavors and a touch of spice. The 2005 vintage began with an unusually wet and cool spring. August brought heat and a cool autumn followed. Harvest was completed just before Thanksgiving, one of the longest harvests on record.
Blend: 68% Zinfandel, 21% Syrah, 3% Petite Sirah, 3% Charbono, 2% Lagrein, 1% Valdiguie, 1% Grenache, 1% Tempranillo.

2005 Mer Soleil Chardonnay
Central Coast, South Africa
Mer Soleil Chardonnay is barrel fermented, then aged in French oak barrels, about 40 percent of them new. This is always a riper-style Chardonnay, but it also has lots of zingy acidity, along with flavors of grapefruit, lemon, pear and some creamy vanilla accents. The wine opens with tropical fruit and honeysuckle aromas. Luxurious flavors of crème brulee and even a hint of butter are framed by notes of fine oak and the lively acidity of citrus zest. The mouth-feel is full and lush and brings all the wine’s elements through to a long, persistent finish.

Winemaker Mike Drash freaked out when he tasted the unique white wine blend of Fruili, Italy, and crafted this exotic blend of Pinot Grigio, Ribolla Gialla, Sauvignon Blanc and Chardonnay. Treating each varietal separately creates a complex wine with multiple layers of exotic fruit, soft citrus, honey and spice that dance across your senses. Intense aromas of tropical fruit and orange peel combine with rich flavors of dried apricot, spice and toasted nuts to create a lush texture and brisk mouthwatering finish.

Charles Casto, General Manager, has worked in the food and beverage industry for twenty-seven years. Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.
