The Fish Market's Winekeeper
While “The Winekeeper” was making a name in the service industry, The Original Fish Market was one of the first and only restaurants in the area to have a Winekeeper System. The Winekeeper keeps wines fresh as the moment they are uncorked for up to six weeks. The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer fifty-two wines by-the-glass.

2006 Pomelo, Sauvignon Blanc, California
Inviting citrus, pineapple aroma that lingers seductively. A full, round, refreshing mouthful of grapefruit and figs. This wine is creamy and rich while being crisp and complex. A great wine to pair with spicy Asian faire, raw oysters, seafood and cheese.

2004 14 Hands, Cabernet, Washington State
The wine was aged for approximately one year in a combination of American and French oak barrels adding structure and complexity to the finished wine.
This Cabernet flaunts intense aromas of berries and spice, while a hint of bramble lingers in the background. Bright, juicy fruit flavors are complimented by refined, velvety tannins. This medium-bodied wine’s generous aromas and appealing mouthfeel beckon for just one more sip.

2005 Adelsheim, Pinot Noir, Willamette Valley
This is their signature red wine and best-known label. The wine is produced from grapes grown entirely in the northern Willamette Valley, with the same “light touch” winemaking as our Single Vineyard wines. This wine displays red fruit and dark cherry characters, both in the nose and on the palate. Wild cherry and juicy raspberry flavors intermingle with hints of spice. Pair this fruit-forward, satin-textured beauty with salmon or ahi, veal or pork, poultry (think duck) and hearty vegetarian entrees. The wine is medium bodied, with a long finish and soft tannins.

2005 Wente Chardonnay, Livermore Valley, San Francisco Bay
The 2003 Doobie Red Collector Series commemorates over three decades of music from legendary Rock ’N Rollers, The Doobie Brothers, and their long time manager and compatriot, Bruce Cohn. This wine is the second limited production series and reflects blending of grapes grown from the B.R. Cohn Olive Hill Estate Vineyards and selected North Coast vineyards. This combination offers exceptional rich flavors of black cherry and hints of vanilla. Aging in premium French oak adds to a smooth, long finish.
Shows lots of sophistication at a good price. Enjoy the beautiful straw color and aromas of freshly cut red apple, vanilla, and well-integrated oak. There are also enticing aromas of tropical and citrus fruit. The predominant flavors are clean, tart apple with toasty graham and subtle oak. There’s a richer streak of butter-sautéed banana, finishing with caramelized honey.
This Chardonnay has a mouth-filling body with a medium-long finish that is very refreshing. The wine is quite dry, even minerally.

Charles Casto, General Manager
Charles Casto, General Manager, has worked in the food and beverage industry for twenty-seven years. Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.

Rhiannon Naylor Holmes, Assistant General Manager
Rhiannon Naylor Holmes, Assistant General Manager, started in the food and beverage industry almost ten years ago. In 1996, she started as a server at this property, and was promoted in management through the years, working her way to her present position, Assistant General Manager, in 2001. Among the many responsibilities, Rhiannon orders and maintains the entire wine and beverage inventory.
