Rombauer Vineyards’ 2004 Zinfandel captures the essence of California Zinfandel with this ripe, fruit driven wine. It is filled with aromas of boysenberries, raspberries and wild berries. The wine is loaded with flavors of ripe, zesty wild berry and blackberry jam that picks up spicy, peppery notes. It finishes with a fantastic burst of fruit and concentrated berry flavors. Bouncing around the palate with nearly reckless abandon, the beautifully balanced, ripe-fruited ’04 Rombauer Zinfandel drinks superb now; not for aging, great with grilled beef.

The Fish Market\'s Winekeeper
While “The Winekeeper” was making a name in the service industry, The Original Fish Market was one of the first and only restaurants in the area to have a Winekeeper System. The Winekeeper keeps wines fresh as the moment they are uncorked for up to six weeks. The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer fifty-two wines by-the-glass.

2003 Tyrells “Lost Block” Australia, Shiraz
The Lost Block was named following the 1993 vintage when it was mistakenly allowed to ripen for a longer period then usual. With an impending storm, vineyard workers were hurried out of the H.V.D. (Hunter Valley Distillery) vineyard to pick less storm resistant fruit. Some weeks later the Vineyard Manager discovered, to his horror, a very ripe, unpicked block of Semillon. Thankfully they were so impressed by the characters of the finished wine that they now intentionally lose the Lost Block each year to continue the tradition.
Winemaker’s Notes:
The 2003 Lost Block shiraz is deep red in color with a bright purple rim. The nose displays aromas of ripe plums, chocolate and vanilla essence. Sweet Shiraz fruit and spicy white pepper are evident on the palate, which is supported by form tannins, along with good length and complexity.

2005 Honig, Napa Valley, Sauvignon Blanc
Fresh and zingy, with aromas of ruby grapefruit, mango and papaya and perfectly balanced citrus and tropical flavors. The texture is crisp and mouthwatering with a minerally finish. Using sustainable farming methods, the family farms 70 acres of vineyards in Rutherford, in the heart of Napa Valley. To further enhance fruit quality, they thin the crop, position the shoots and pull the leaves around each individual cluster. When the fruit reaches the perfect balance of ripeness, mature flavor and acidity, it is hand-picked.

2003 Coopers Creek, Tom Cat, New Zealand
First impressions would consider it forward and somewhat arrogant, but don’t be fooled, once relaxed this extrovert becomes approachable and friendly with a touch of suave. With a body that’s supple and lively and a finish that’s soft and deceptively sweet, this streetwise character certainly holds his own amongst his peers. Youthful red with red/crimson hints at the rim.

2003 B.R. Cohn, Doobie Red Series, North Coast
The 2003 Doobie Red Collector Series commemorates over three decades of music from legendary Rock ’N Rollers, The Doobie Brothers, and their long time manager and compatriot, Bruce Cohn. This wine is the second limited production series and reflects blending of grapes grown from the B.R. Cohn Olive Hill Estate Vineyards and selected North Coast vineyards. This combination offers exceptional rich flavors of black cherry and hints of vanilla. Aging in premium French oak adds to a smooth, long finish.
The 2003 Doobie Red celebrates the rich history of this band and was produced in memory of Keith Knudsen, long time drummer for the Doobie Brothers since 1974. A portion of the proceeds of this wine is donated the National Veterans Foundation.

Charles Casto, General Manager, has worked in the food and beverage industry for twenty-seven years. Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.

Rhiannon Naylor Holmes, Assistant General Manager
Rhiannon Naylor Holmes, Assistant General Manager, started in the food and beverage industry almost ten years ago. In 1996, she started as a server at this property, and was promoted in management through the years, working her way to her present position, Assistant General Manager, in 2001. Among the many responsibilities, Rhiannon orders and maintains the entire wine and beverage inventory.
