Rashambo is California for rock-paper-scissors. While growing up in Japan, Naomi and her brother began to use this game to settle many of their arguments. In 1999, Noami moved to the family vineyard in California to oversee the new winery. It was her task to name the winery. So she used her California roots and Japanese heritage to sum up the name.
If you like rich, soft merlot with aromas and flavors of dark chocolate, violets and cherries, grab a friend get dinner and “rashambo” for the tab.

The Fish Market's Winekeeper
While “The Winekeeper” was making a name in the service industry, The Original Fish Market was one of the first and only restaurants in the area to have a Winekeeper System. The Winekeeper keeps wines fresh as the moment they are uncorked for up to six weeks. The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer fifty-two wines by-the-glass.

Gekkeikan Zipang Sparkling Sake
For a refreshing change of pace, the Gekkeikan Zipang Sake is a lively and bright; crisp, refreshing and easy to drink. It is naturally carbonate Sake which is produced by special techniques. It is served chilled and has a sweet yet refreshingly light flavor. Excellent choice to serve with a light appetizer and pairs well with sashimi or sushi.

2003 Red Bicyclette, Merlot Vin de Pay, France
Very dark reddish-purple, almost black. Aromas display perfumed blackberry and dried-cherry fruit and hints of spice. Black fruit and spice notes carry over the palate in a tart, dry and somewhat austere flavor with subtle herbal notes of anise and tarragon and soft but obvious tannins in the background.

Yellowglen, Sparkling, Australia
Established in 1971, Yellowglen was named after a gold mine that was discovered in the middle of what became premium vineyards. This wine is crafted predominately from Chardonnay with some Pinot Noir, sourced from South-Eastern Australia. Yellow is light straw in color and has a persistent bead. It is a full and generous wine with a lovely mouthfeel and creamy mousse. It is fresh with a classy, crisp, clean finish. The wine displays melon, pineapple and citrus characters.

Charles Casto, General Manager
Charles Casto, General Manager, has worked in the food and beverage industry for twenty-seven years. Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.

Rhiannon Naylor Holmes, Assistant General Manager
Rhiannon Naylor Holmes, Assistant General Manager, started in the food and beverage industry almost ten years ago. In 1996, she started as a server at this property, and was promoted in management through the years, working her way to her present position, Assistant General Manager, in 2001. Among the many responsibilities, Rhiannon orders and maintains the entire wine and beverage inventory.
