The Fish Market's Winekeeper

While “The Winekeeper” was making a name in the service industry, The Original Fish Market was one of the first and only restaurants in the area to have a Winekeeper System. The Winekeeper keeps wines fresh as the moment they are uncorked for up to six weeks. The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer fifty-two wines by-the-glass.

2004 Little Boomey, Shiraz

Named after the Australia’s ancient aboriginal boomerangs, Little Boomey wines soar with the sporty spirit, outstanding flavor, and wildly vibrant character of the Land Down Under. The wine was enhanced with a touch of American oak and 13% Cabernet Sauvignon to improve structure and complexity. They use heaps of South Oz fruit, so pull the cork, toss some back, and like the boomerang, you’ll keep coming back for more! Offered at The Original Fish Market

2004 3 blind moose
California Merlot
Deep, vibrant red color with hints of purple, lifted ripe cherry, mocha, chocolate, and spice aromas. It is a medium-bodied, soft palate with round, generous, easy drinking flavors. A judicious dollop of French and American oak enhanced the wine’s texture and complexity, as did blending in small amounts of Cabernet Sauvignon, Petite Sirah, and Zinfandel.

2004 Ironstone, Obsession Symphony
California
The Symphony grape was developed in 1948 at the University of California by Dr. James Olmo from crossing the Muscat of Alexandria with Grenache Gris. A delicate Muscat flavor and aroma characterize the wine. Symphony wines show unusual resistance to oxidation and maintain their light color, flavor and bouquet for ten or more years in the bottle at cellar temperature. Unlike most wine grapes, the Symphony clusters are generally very large with very large berries. The 2004 Ironstone Vineyards Obsession was produced from Symphony grapes sourced from the family’s Murphys and Lodi vineyards.

Ironstone’s Obsession has youthful aromas that are markedly floral. Extremely drinkable, this lusciously brilliant and fanciful wine is full of fruit flavors, and finishes crisp and clean. It is great with spicy dishes or simply sipped while relaxing. Offered at The Original Fish Market

2003 Trinchero, Napa Valley Cabernet Sauvignon Chicken Ranch Vineyard
The farming improvements they made at Chicken Ranch over the past few years have begun to yield impressive results. This is one of their most approachable Cabernets. The color is dark. The nose is cassis, blackberries, plums and leather, and the finish is smooth and balanced.

2003 Heller Estate, Chardonnay
Carmel Valley, California
Over looking the Cachagua region of Carmel Valley and surrounding hills, lie the beautiful mountain vineyards of Heller Estate. Their grapes are planted at an altitude of 1200-1500 feet, produce rich, luscious grapes, which result in outstanding premium wines. The vineyards are 100% organic. Neither herbicides nor pesticides are used in the production of the grapes.

2003 Twisted River
Gewürtztraminer, Germany
These grapes are grown in a little cooler climate allowing the flavors to concentrate and balance well. This wine will be enjoyed while eating food with a little spice. Twisted River will go nice with a zesty-flavored fare. The flavor and aroma include rose, pear, citrus and spice.

Charles Casto, General Manager

Charles Casto, General Manager, has worked in the food and beverage industry for twenty-seven years. Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.

Rhiannon Naylor Holmes, Assistant General Manager

Rhiannon Naylor Holmes, Assistant General Manager, started in the food and beverage industry almost ten years ago. In 1996, she started as a server at this property, and was promoted in management through the years, working her way to her present position, Assistant General Manager, in 2001. Among the many responsibilities, Rhiannon orders and maintains the entire wine and beverage inventory.
