The Fish Market's Winekeeper

While “The Winekeeper” was making a name in the service industry, The Original Fish Market was one of the first and only restaurants in the area to have a Winekeeper System. The Winekeeper keeps wines fresh as the moment they are uncorked for up to six weeks. The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer fifty-two wines by-the-glass.

Wild Bunch, White Blend, California Montevina Winery
Wild Bunch White is an interesting little blend of Chardonnay, Chenin Blanc & Pinot Grigio with just a touch of Muscat and Sauvignon Blanc. The nose is very pleasing with hints of peaches, wet flavors of apple and pear, and light whiffs of citrusy zest and honeysuckle. The wine finishes with a touch of sweetness. Refreshing anytime.

2002 J. Lohr, Carol’s Vineyard, Cabernet Sauvignon, Napa Valley
This classic Napa Cab comes from this great vintage which is the second vintage of J. Lohr Carol’s Cabernet Sauvignon. The tannins are fine, soft, ripe and sweet. With new oak and cassis aromas, your first sip will explode with blackberries, cherries and vanilla.

2004 Yalumba, Y Series, Riesling, Australia
The Yalumba Y Series Riesling is a blend of fruit from the adjacent regions of Barossa Valley and Eden Valley. With the warmer Barossa Valley and the cooler Eden Valley, these two regions make up the Barossa, a source renowned for its quality Riesling wines. The palate is lively and refreshing with generous lemon and grapefruit flavors, and a hint of tropical fruits on the finish.

2003, Montevina Winery, Terra d’Oro, Zinfandel
The 2003 Montevina Terra d’Oro is a blend of three of their very favorite Shenandoah Valley Zinfandel vineyards. The vineyards used produce such a stunning expression of Amador Zinfandel very little winemaker intervention is applied. Dark fruit flavors of black currant and fig accompany the aroma of a steaming cup of Mexican Hot Chocolate.

Tin Roof, Chardonnay, Sonoma County
Produced and bottled under the Murphy-Goode label, the Tin Roof Chardonnay is an exceptional compliment to the Chardonnays. It is lean, crisp and bright, with opulent textures resulting from only partial barrel fermentation and minimal oak aging. Its delicate flavors of white peach and apricot are supported by a racy green apple structure, making the wine exceptionally food friendly.

Charles Casto, General Manager

Charles Casto, General Manager, has worked in the food and beverage industry for twenty-seven years. Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.

Rhiannon Naylor Holmes, Assistant General Manager

Rhiannon Naylor Holmes, Assistant General Manager, started in the food and beverage industry almost ten years ago. In 1996, she started as a server at this property, and was promoted in management through the years, working her way to her present position, Assistant General Manager, in 2001. Among the many responsibilities, Rhiannon orders and maintains the entire wine and beverage inventory.
