Chocolate Chip Cookie Pie

Nothing beats the smell and taste of freshly baked chocolate chip cookies! As children, we couldn’t even wait for them to cool before begging our Mothers for that first bite…

Now as adults, we usually don’t have the time or the skill to “make them like mom did.” That is what makes this recipe so special. This recipe is unique and adds a little glamour to the simple concept of chocolate chip cookies. Most of us wouldn’t even dare think of serving chocolate chip cookies to our dining guests as the main dessert. However this Chocolate Chip Cookie Pie is one you will be proud to serve and it is sure to put a smile on everyone’s face.

This recipe for Chocolate Chip Cookie Pie is very simple to prepare and will be a nice surprise for your family or friends. The warmth of the pie accompanied by the cold of the ice cream and chocolate sauce is the perfect closing to any meal.


Chocolate Chip Cookie Pie
Yields 2 Pies

8 ounces Eggs (room temperature)
6 ounces Flour
8 ounces Sugar
7 ounces Brown Sugar
12 ounces Butter (softened)
8 ounces Walnuts (chopped)
12 ounces Chocolate Chips
2 each 9" Pie Shells (Frozen Deep Dish)
Vanilla Ice Cream (or other flavor)

  1. Place eggs in a mixing bowl fitted with a paddle and beat on high speed for approximately three minutes.
  2. Stop mixer and add the flour, sugar and brown sugar to your beaten eggs. Continue beating on high speed for another three minutes.
  3. Stop machine again, scrape the bowl with a rubber spatula, add softened butter then beat for another three minutes on high speed.
  4. Stop mixer and remove your bowl from the machine stand. Fold in, using a spatula, the walnuts and about three-quarters of the chocolate chips (reserve the balance of the chips for later use).
  5. Place pie shells in pie pans and allow to completely thaw. Divide the batter evenly into the two thawed pie shells (approximately 1.5 pounds of batter in each). Spread batter evenly making sure the batter is touching the edges of the pie shell. Sprinkle the remaining chocolate chips on top of each pie.
  6. Place pies on sheet trays and bake in 325° oven for approximately 60 minutes depending upon your oven. The pies should be golden brown on top.
  7. Remove from the oven and let completely cool to room temperature. Wrap in plastic wrap and refrigerate until ready to serve.

To Serve:

  1. Cut pie into desired size and microwave each individual slice for about twenty seconds.
  2. Place slice on a seven-inch plate and place a scoop of vanilla ice cream next to it.
  3. Drizzle chocolate sauce on top of the pie and ice cream.
