The Fish Market's Winekeeper

While “The Winekeeper” was making a name in the service industry, The Original Fish Market was one of the first and only restaurants in the area to have a Winekeeper System. The Winekeeper keeps wines fresh as the moment they are uncorked for up to six weeks. The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer fifty-two wines by-the-glass.

Rancho Zabaco, Dancing Bull, California
Rancho Zabaco is proud of their award-wining Dancing Bull Zinfandel and Sauvignon Blanc and figured they must be on to something. Their loyal customers asked for more wine types in the Dancing Bull style: intense, crisp, zingy whites. So, THEY DID! Their mantra remains: if they can’t make it stand out, they don’t make it. This Chardonnay is crisp and refreshingly dry showcasing green apple and zesty citrus flavors. Minimal oak ensures a fresh, clean style.

2003 Ferrari Carano, Sienna, Red Wine, Sonoma County
The Siena is supple and ripe with heady fruit aromas of strawberry jam, dried cranberry and raspberry, mixed with chocolate and a few spicy/pepper hints. Good acidity, soft tannins and a lingering finish meet expressive berry fruit. This is a fantastic blend of Sangiovese, Cabernet Sauvignon and Malbec in the “Super Tuscan” style. This wine pairs perfectly with savory Italian dishes, pasta with flavorful tomato sauces or the American favorite – chicken.

2001 The McRae Wood, Shiraz, Clare Valley
This Shiraz honors the vision of pioneer Jim Barry, a Clare Valley winemaker. This wine was inspired by both grape variety and location. Spicy aromas of sweet blackberry, mocha and licorice compliment a multi-layered palate. The velvety tannins add structure, ensuring a long, elegant finish.

2004 Sketchbook, Cabernet Sauvignon, Mendocino Collection
This Cabernet is made from exceptional fruit grown in southern Ukiah Valley. Aged Bordeaux-fashion in lightly toasted French oak, velvety and chocolate tannins round out the lush, dark berry flavors. Perfect with hearty fare; burgers, rosemary-scented white beans or lamb with roasted vegetables.

2005 Duck Pond, Pinot Gris, Oregony
Carmel Valley, California
The soil in these vineyards is primarily “Jory” soil, a weak volcanic ash and rock type promoting low yielding vines. The clean crisp air and cooling breeze blows in from the Pacific Coast throughout the summer’s longest days. The resulting wine has a nose of peach, vanilla and lime. The fruit quality is reflected in the wine’s opulent mouth feel and gorgeous fresh-fruit palate. This wine is excellent with shellfish, oysters, cheeses or chicken.

Charles Casto, General Manager

Charles Casto, General Manager, has worked in the food and beverage industry for twenty-seven years. Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.

Rhiannon Naylor Holmes, Assistant General Manager

Rhiannon Naylor Holmes, Assistant General Manager, started in the food and beverage industry almost ten years ago. In 1996, she started as a server at this property, and was promoted in management through the years, working her way to her present position, Assistant General Manager, in 2001. Among the many responsibilities, Rhiannon orders and maintains the entire wine and beverage inventory.
