The Fish Market's Winekeeper

While “The Winekeeper” was making a name in the service industry, The Original Fish Market was one of the first and only restaurants in the area to have a Winekeeper System. The Winekeeper keeps wines fresh as the moment they are uncorked for up to six weeks. The system protects all wines from “turning” by instantly replacing the oxygen in a freshly opened bottle with pure, odorless, tasteless nitrogen gas, thereby eliminating the oxidation process which is damaging to opened wine. Thru this system we are able to offer thirty-six of our wines by the glass, soon to be fifty-two.

jester wine 2003 Jester, Peachy Canyon, Paso Robles
Just looking at this unique label makes you want to “Discover the Magic, Unravel the Mystery.” Jester is a beautiful blend of Bordeaux and Rhone varieties. Winemaker Josh Beckett describes black currant, casis, blackberry, cherry aromas, exotic herbs and coffee flavors as prominent components. Power and balance along with toasted oak flavors also play a supporting role in the structure of the wine. The sun warms the vineyards of Peachy Canyon during the day, creating intense flavors of spectacular fruit. But, in the cool dark of night, that’s when the legend says The Jester rules, producing wine of considerable depth, complex character and haunting finish. We hear stories of his mischievous antics and good-humored pranks. The strange tales come from all over the world. Share yours, if you dare.

louis roederer 1997 Louis Roederer, Cristal, Reims
In its famous clear bottle, the oldest and ultimate Champagne to be produced by Champagne Louis Roederer is one of the many champagnes offered at The Original Fish Market. Cristal is one of the best-known prestige cuvées. Cuvée Cristal remains faithful to the value, which inspired it in 1876 when it was made especially for Tsar Alexander II. Cristal is produced in accordance with strict production criteria. Vinified and aged in oak, Cristal shows a delicate vinosity. Rated 94 in the Wine Enthusiast.

girard wine 2002 Girard, Cabernet Sauvignon, Napa Valley
High up on Prichard Hill, Girard Winery has 18 acres designated for Cabernet Sauvignon. The vines range in age up to 35 years. The first impression of the 2002 Estate Cabernet provides a wonderful lushness on the pallet with a perfect balance of fruit and acid. The tannins are soft at present, but will provide years of age-ability for the wine. The flavor profile includes: Dark Cherry Liqueur, Blueberry Cobbler, Casis and a touch of cocoa.

patz hall wine 2004 Patz & Hall, Pinot Noir, Sonoma Coast
This vintage is the third release of Patz & Hall, Sonoma Coast Cuvée. There are 14 vineyards in this blend, most of which have appeared in their previous Pinot cuvées. Dark red, almost purple in color, it shows bright, delineated aromas of raspberry, cherry and cranberry interwoven with a spicy clove and five spice component. It is elegant with great purity and freshness.

gold dolce wine 2000 Dolce, Liquid Gold, Napa Valley
Named from the Italian phrase Dolce Far Niente – sweet doing nothing - Napa Valley’s Dolce winery is the only winery in North America that is solely devoted to producing a single, late harvest wine. Dolce is a rare wine that cannot be produced every year. It is made when a natural, beneficial mold called botrytis cinerea attacks the grapes on the vine, while evaporating the water content and concentrating the sugars, acids and flavors. The quantity produced varies greatly, from as few as 300 cases to as many as 3,000 cases, depending on how much botrytis develops each year. It’s fabulous, gooey-sweet in apricots, honey, vanilla, peaches and cream and ripe, sweet bananas sautéed in butter. 86% Sémillon and 14% Sauvignon Blanc.

Charles Casto, General Manager

Charles Casto, General Manager, has worked in the food and beverage industry for twenty-seven years. Included is: Hotel Industries, Military Officers Club, Italian Restaurant, Manager of a country club and The Original Fish Market Restaurant. In 1998, he opened The Pittsburgh Fish Market as the Assistant General Manager. In 2001 the restaurant became The Original Fish Market and Casto was promoted as the General Manager.

Rhiannon Naylor Holmes, Assistant General Manager

Rhiannon Naylor Holmes, Assistant General Manager, started in the food and beverage industry almost ten years ago. In 1996, she started as a server at this property, and was promoted in management through the years, working her way to her present position, Assistant General Manager, in 2001. Among the many responsibilities, Rhiannon orders and maintains the entire wine and beverage inventory.
